YORKSHIRE PUDDING

Preheat oven to 450ºF. In medium bowl, with wire whisk, beat 3 large eggs, 1½ cups milk, 1½ cups all-purpose flour, and ¾ teaspoon salt until smooth. Spoon 3 tablespoons roast-beef pan drippings into metal baking pan (13" by 9"); place in oven for 2 minutes. Remove pan from oven. Pour milk mixture over hot drippings. Bake until puffed and lightly browned, about 25 minutes. Cut into squares; serve hot. (For individual puddings, use eighteen 2½" by 1½" muffin-pan cups; bake puddings only 12 to 15 minutes.) Makes 12 accompaniment servings.
